Abstract
Coconut is the most important commercial tree in the Kerala state of India. Any technology that can add value to any part of this plant will be earning lot of income to the farmers. This chapter explains how the technology to convert the coconut water, which is otherwise a waste from the coconut oil making industries, to vinegar is earning money to farmers in this stae and how it is bringing the social reforms. The procedure for vinegar production from coconut water is explained. This is based on a two stage fermentation technique - coconut water to acid and then acid to vinegar.
Many self-help-groups (SHGs) were established in Malappuram district of Kerala state, India. These groups are earning descent income from these small units. Every member is earning upto Rs. 10000 per month. This is one among the most successful technologies to bring about societal upliftment.
